I can relate to what your are saying about fusion-esque versus traditional. We get so captured in what foods should taste like it can be difficult to push that boundary, for me, anyways. I also wish success upon restaurants like these because they&#39;re at the forefront of a movement of sustainability that I hope other restaurants follow suit on.
