I think you can do it as long as you don&amp;#39;t mix too hard. Honestly, it&amp;#39;s not too hard to mix by hand. The only thing I can think about suggesting is to try baking it for longer? Or maybe you do need a bigger pan. I was going do a baked nian gao recipe post too!  *quivers at the thought of dueling recipe posts with Jen and TUK*  &lt;br /&gt;&lt;br /&gt;Baked is great since it&amp;#39;s supereasy, but I&amp;#39;m with &amp;quot;andthisblog&amp;quot; on the steamed and then pan-fried nian gao.  So gooey and good.  For the steamed version, the wikihow recipe seems a little off (not enough water.)  I think you can just follow Jen&amp;#39;s recipe, and take out the eggs, replace the milk with water, and the white sugar with brown sugar.
