Thanks Peterfan. Bergamot is picky about their staff. They rather go short than just let anyone work for them. It is the reason why they can maintain high quality of service, but at the expense of wait times.

With regards to food, the difference between perfectly done and overcooked is often a matter of seconds. More often than not, it's the amount of time sitting on the counter waiting for service.
