I am still tweaking...</title><content type='html'>Lisa- thanks for your comment! I am still tweaking and learning about all the variations of this recipe.  I personally also tried my mom&amp;#39;s version and had trouble browning it too!  I think the water content in the tofu makes it harder, and it didn&amp;#39;t help that I bought silken tofu.  I think firm tofu is a better bet.  My mom gets around the browning issues by not browning at all, but instead just wrapping small meat balls with individual cabbage leaves, forming these little rolls that she then braises/steams in a pan (similar to the original recipe). It&amp;#39;s much less messy this way. I did a variation of your mom&amp;#39;s variation, with 1 lb of pork and half a large cube of silken tofu for the patty.  Yummy and the tofu was surprisingly unobtrusive!  I couldn&amp;#39;t get the patties to brown, however.  Mine stuck in the pan despite putting a hefty amount of oil on the bottom.
